Our pinsa....
In contrast to pizza, not only one type of flour is used for pinsa, but a mixture of different types of flour. This makes the dough fluffy. Sourdough also brings flavor. A little patience is required for the preparation, the dough has to rise for up to 72 hours, but then it is wonderfully fluffy and more digestible.It is not shaped round, but rather elongated and narrow. The pinsa is reminiscent of flatbread in terms of appearance and taste - crispy on the outside and soft on the inside - and thus forms the perfect basis for both savory toppings. Both the classic red and white sauce go well with the pinsa.
