The property

The name Château Batailley refers to the Hundred Years' War, a battle of which was fought in 1453 on the estate's lands. Château Batailley became a wine estate from the 17th century. This 5th Cru Classé in 1855 is produced in the Pauillac appellation, on the left bank of Bordeaux.

The vineyard

This Château Batailley 2015 is a Pauillac wine from a 60-hectare vineyard planted on gravelly soils.

Winemaking and aging

Fermentation and maceration over a period of 25 days, in small thermoregulated stainless steel vats. Aging is carried out exclusively in barrels (55% new, 45% wine) for 18 months.

Cabernet Sauvignon (77%), Merlot (20%) and Petit Verdot (3%)

This vintage is a blend of three neighboring plots: “Vers Cras”, “Vivarais” and “Clos Gaillard”.

Soils: Dark brown soils from fine, massive and hard white-beige limestones, sometimes chalky (Jurassic). The terroir is thin and very stony.

Tasting: The nose opens delicately with the mineral scents of the flint of its birthplace, the “Les Cras” terroir. A graceful patina and a fine freshness accompany its chalky aromas, almost Chablis-style.
After a broad and frank attack, the palate offers a seductive smoothness and a perfect balance, always carried by a subtle minerality. An admirable length and a beautiful nobility of origin make it a great Pouilly-Fuissé of character. In the heart of the Côte Rôtie
The Côte Rôtie Vineyard is approximately 2000 years old. Built mainly by the Romans in the communes of Ampuis, St Cyr sur le Rhône and Tupin Semons, it covers approximately 300 hectares. The soil is mainly composed of Schist with a South/South-East orientation.
The DAVID estate was created at the end of the 19th century and has been passed down from father to son ever since. Bertrand is today the 4th generation to take over work in the vineyard.

Bertrand, a passionate winemaker, grew up among the family vineyards. At the age of 18 he went to study at the Beaune wine high school to improve his skills in oenology, then in Beaujolais in Belleville sur Saône to diversify his knowledge. Subsequently, he will do a BTS at Agropolis (Montpellier) in order to continue his studies. He returned to Ampuis at the age of 20 within the family estate, and at the same time created his own estate in Viognier and Syrah. For years he will bring his knowledge to develop the Côte-Rôtie vintages from the DAVID estate.
In 2013, Bertrand took over the estate and expanded the vines in the Côte Rôtie appellation. After 10 years of testing with his father, he created the “Esprit de Famille” cuvée in 2014, a plot selection cuvée, 100% new from Haut de Futet.
Eager to be able to create a high-end white wine to complement the estate's range, Bertrand carried out a plot exchange in Condrieu. In 2017 he will create his Condrieu wine “Cuvée Léony” aged in oak and acacia barrels (from high futet)

Located in the Loire department, on the banks of the Rhône, the Pierre Blanche estate is a family property, created by Michel and Xavier Mourier, at the beginning of the 1980s. A persistent and aromatic red wine from Roussillon
The property

Located 20 kilometers northwest of Perpignan, Domaine Gauby is an essential name in Roussillon wines. Covering an area of approximately 85 hectares, the estate's terroir is made up of 45 hectares of vines, some of which are centuries old, as well as 40 hectares of meadows, oak forests and scrubland. Located between 150 and 200 meters above sea level and overlooking the sea, the vines benefit from a wild, arid and steep environment, favoring deep rooting in soils composed of limestone, marl and schist.

Concerned about preserving its environment, this Roussillon estate runs its vineyard without chemicals and synthetic products in favor of natural products (plants, essential oils, compost, etc.).

Vieilles Vignes 2016 from Domaine Gauby is an IGP Côtes Catalanes wine made from 120-year-old vines cultivated using agrobiology, polyculture and agroforestry on soils composed of limestone and shale.

Winemaking and aging

Harvested manually, the grapes are sorted in the cellar before 100% destemming. Vinification is carried out in the traditional way, with maceration for 2 to 4 weeks and fermentation using native yeasts. Lasting 24 months, the aging takes place exclusively in barrels.

My vintage “A Contre Courant” is made with grapes from the oldest plots of Carignan and Grenache in my vineyard.
But what makes this wine an exceptional vintage is its aging “under veil” for 4 years.
Veil wines are characterized by the spontaneous development of yeasts forming a veil on the surface of the wine in contact with the ambient air (during its barrel aging phase).
This practice, which is unusual for wine due to the risk of acetic pitting during storage in unused containers, gives it specific organoleptic analytical characteristics (aroma of fig, tobacco, candied cherry, and a very long finish in the mouth). ).
Among the very rare wines aged in this way we know in particular the yellow wines of Jura, but no red wine.
Indeed, by practicing this aging on a red wine, I am going against standardized modern oenology, hence the name of this vintage: “against the flow” of established standards and “taste correct”.
It's a vintage that I created for true wine lovers, those who cannot resign themselves to the standardization of taste, to stereotypical, standardized wines, in short, to the ultra conformism that prevails.
This wine has an intense garnet color, with coppery reflections.
On the nose appears a complex bouquet of ripe fruits, candied fruits, figs…
In the mouth, we have a sensation of power, of rich and robust substance, with ripe and creamy tannins.
It is a wine built on oxidation, decanting is recommended.

MINUTY M is the vintage that reflects Provence and the Minuty style. Provence through its selection in all the terroirs of the Appellation, from the maritime border to the hinterland via Sainte-Victoire. Provence also through the shape of the bottle, refined in 2014, but invented and designed in the 1960s by Monique Farnet, the mother of Jean-Etienne and François Matton. This revolutionary shape of the bottle was then adopted by the entire region and shows us to what extent the Matton-Farnet family has always been a major player in Provence wines. Finally, Pure Minuty, as this cuvée is emblematic of the Minuty style where aromatic intensity mixes with lightness on the palate.

THE METHOD
Everything is done in this vintage M to preserve its balance and freshness. Jean Etienne and François Matton mainly select Grenaches for their aromatic elegance, Cinsault for its freshness, Syrah for its complexity as well as a touch of Tibouren on the seaside, for the delicacy of its white-fleshed fruit aromas. Everything is done to preserve the beautiful liveliness of the juices.

TASTE
Notes of red fruits dominate the nose. The palate is delicious and round, the fruits are crunchy. A little sweetness tempers its liveliness. An introduction to the expression of Provence rosé.

THE MOMENT
The Cuvée Minuty M Rosé is the one for all moments. Served between 8-10°, on the terrace or by the pool, with olives or any type of aperitif: tapas, taramasalata, crackers, wasabi peas, vegetable chips. Ideal as an aperitif, some like it chilled, others at room temperature. In any case you will see that the bottle does not last long...be careful though, at 17° it quickly heats up the ears during the aperitif!

Champagne Brut BRICE Héritage

The Héritage vintage from Maison Brice is a champagne that is both tense and vibrant, but which also offers a beautiful generosity on the palate. It is a champagne that will be particularly appreciated as an aperitif, for its freshness and delicacy.

The Héritage vintage reflects the terroir of Maison Brice, it combines 70% Pinot Noir from the Bouzy and Loches-sur-Ource terroirs with 30% Chardonnay from the Grauves terroir, a village on the Côte des Blancs.

The wines are entirely aged in stainless steel vats in order to maintain great liveliness. Along the same lines, malolactic fermentation was not carried out. This allows the wine to retain all its mineral tension.

The dosage is Extra Brut (5g/l), simply highlighting the aromatics of the Pinot Noirs from Bouzy and the deliciousness of the Chardonnays from Grauves.

The Héritage vintage, produced by the cellar master of Maison Brice, Christophe Constant, has a pretty golden color.

On the nose it is a champagne which reveals beautiful nights of very ripe yellow fruits, but also a more gourmet touch which evokes honey and dried fruits.

In the mouth, Héritage begins with a frank attack, then in the mid-palate the wine becomes more present, it fills the palate well. There is a beautiful volume, on fruit and generosity.

The Héritage Brice vintage is a very pleasant champagne, a recommended choice for a nice aperitif.

The Plots

Champagne Joël Falmet

Author of his champagnes, founder of his own brand, Joël Falmet is a winegrower-harvester-handler in Rouvres-les-Vignes, a village located on the border of Aube and Haute-Marne, between Bar-sur-Aube and Colombey-les-deux-Églises, not far from Clairvaux Abbey.
Member of the national Terra Vitis Federation, Jöel Falmet takes the greatest care of his eight hectares of vines, in compliance with demanding specifications and checked annually. Intervene on the vines only in a justified and thoughtful manner, preserve biodiversity, maintain plant cover, reduce inputs to what is strictly necessary and in the absence of any other alternative: constraints which have become the rules of conduct for a responsible operation.



The vines planted with Pinot noir, Chardonnay, Pinot meunier and Petit meunier are pruned according to each plot. Mechanical weeding, grassing between the rows and on the headlands, reasoned fight against cryptogamic diseases: Jöel Falmet is a winegrower committed to the development of a generous and living land, worked with respect.



The grapes from each plot are harvested by hand, at their optimal maturity, and the juices are extracted separately in traditional low-pressure presses, in order to preserve the specific character of each micro-terroir and to offer a wider palette when assemblies. Vinification in barrels carried out in the Jöel Falmet cellar allows the qualities of each grape variety and each plot to be highlighted, and micro-oxygenation promotes the expression of new sensations. The ownership finalizes an approach that is both respectful of family traditions and focused on the creation of more personal bottles.

The Héritage Rosé cuvée from Maison Brice is a champagne with fruit and freshness. This is a cuvée that will pair wonderfully with a red fruit dessert or even a dinner aperitif.

This is a blended rosé, that is to say a rosé obtained from an addition of red wine. This wine is of course from the vineyard that Brice owns in Bouzy, one of the villages most renowned for its red wines. This red wine is added to the same blend as the Héritage vintage, a blend of 70% Pinot Noir and 30% Chardonnay. The Pinot Noirs come from the terroirs of Bouzy and Loches-sur-Ource while the Chardonnay comes from the terroir of Grauves, a village on the Côte des Blancs.

This Rosé champagne produced by the cellar master of Maison Brice, Christophe Constant, is vinified and aged in stainless steel vats in order to maintain great freshness. Along the same lines, malolactic fermentation is not carried out in order to maintain high tension.

The dosage is Extra Brut (5g/l), simply highlighting the aromatic and deliciousness of this Rosé champagne.

The Héritage Rosé cuvée from Maison Brice has a very elegant powdery pink color and very fine bubbles.

On the nose, it is a champagne which reveals delicate notes of red fruits, and a more floral touch.

On the palate, it is a cuvée which opens with a fresh, tense, almost chalky attack, then in the mid-palate we find the pretty notes of red fruits discovered on the nose. The finish is very beautiful, slightly saline.

A very beautiful rosé champagne which will go well with a dessert based on red fruits, but also more surprisingly with a lobster, or summer salads.

The Caperdonich distillery, which stood on the banks of the River Spey, no longer exists. Opened in 1898 and dismantled brick by brick in 2011, this Single Malt is what remains of the whiskey coming from the “secret well”, a place where people met in secret. The Caperdonich distillery has always remained confidential, creating peated and unpeated whiskeys in small batches. While the building no longer exists, the distiller's expertise lives on in the Secret Speyside portfolio, with a peated and unpeated collection.

The name Green Spot originally comes from the marking practiced by the Mitchell family, the first owners of the brand, on their barrels of different ages with colored paint. Initially, there was indeed, a blue spot, a red and even a yellow, but the green spot emerged as the most popular whiskey and eventually established itself as a brand in its own right, Green Spot.

Popular with Irish whiskey connoisseurs, Green Spot is a Single Pot Still whiskey resulting from triple distillation and produced with a mixture of malted (40%) and unmalted (60%) barley (Pure pot still whiskey) which has then aged mainly in barrels having contained sherry (sherry) and a minority in bourbon barrels. The whiskeys used in the composition of Green Spot are all aged between 7 and 10 years.

This maturation gives Green Spot elegance and depth. Old gold in color with golden highlights, it is very spicy, slightly woody but also fruity and vanilla.

Plantation Pineapple is a rum whose manufacturing process is completely unique.

A faithful reminiscence of the 'Pineapple Delicacy' dear to the English of the Victorian era, this rum was created thanks to numerous research carried out in close collaboration with the historian David Wondrich.

The meticulously selected Victoria Pineapples are first peeled by hand, and the peels of the fruit are then infused for a week in Plantation 3 Stars rum. It is once this infusion has been carried out that the distillation begins. During this new operation, it is the flesh of the pineapple which is in turn infused in Plantation Original Dark rum this time, and for many months.

At the end of these different stages, the assembly of the distillate obtained and the infusion occurs to give birth to this delicious Plantation Pineapple. Given the seasonality of Victoria pineapple, this bottle is one of the very limited editions. A resolutely delicious and fruity rum!

The Savoyard Grolle or Friendship Cup

The friendship cup is a wooden container, distributed in Savoie and the Aosta Valley.

The friendship cup is pierced with two to ten holes called spouts and decorated with a sculpted lid. As a digestive, you drink a mixture of coffee, hooch and sugar, possibly garnished with orange and lemon zest.

Each participant drinks in turn from one of the spouts, before passing the cup of friendship to their neighbor, so as not to spill any, by drinking from the chosen spout, in a counterclockwise direction. .
