For 85 years, the small distillery in Le Carbet has excelled in the art of producing agricultural rum. Champagne Vollereaux Réserve Brut

This brut without a year that can be summed up with the number 3: the three Champagne grape varieties assembled in thirds, three harvests (2009 to 2007), three years of storage in the cellar. A cuvée whose dosage seems a little strong, but appreciated for its complexity and for its beautiful evolution. We love its scents of dried fruit and wheat and its round, balanced texture with a finely toasted finish. Nice pairing in perspective with white meat. (NM)

Deutz Brut

The Brut Classic from the house of Deutz offers a robe of a fairly sustained gold color with bubbles of great finesse.

On the nose, its bouquet is very expressive, it first reveals floral notes (hawthorn, white flower, etc.) then aromas of toast, marzipan and ripe fruit (apple, pear, etc.).

The mouth of Brut Classic Deutz combines the freshness of Chardonnay, the smoothness of Pinot and an elegant vinosity. The aromas are well integrated and the texture silky.

The wine is rounded off at the end of the palate with a very persistent fruity note.

Deutz Blanc de Blanc

This cuvée has a pale gold color with green and silver reflections. Its bubbles are fine and regular.

On the nose, it is a champagne that offers beautiful notes of white flowers, then after a few moments, evolves into a more gourmet olfactory signature. We thus find notes of yellow fruits, and a subtle minty note.

On the palate, the Blanc de Blancs 2014 Deutz announces itself with a frank, fresh attack. The texture of the wine is smooth and mineral at the same time. There is a beautiful complementarity between the elegance of the chalky soils of the Côte des Blancs and the wider shoulders of the Chardonnays of the Montagne de Reims.

The finish is intense, persistent.

Team presentation

Roxane: our colorful chef, a dynamic, creative and always positive little woman. A true force of nature in our kitchens, our Rambo of the stove! His professional experience and generosity are reflected in each of his tasty and delicate dishes. Chef of the kitchen, she shares her joie de vivre with the 'La Perfecta' team.
Paulette: The ray of sunshine in the kitchen, always in a good mood, she delights us with her accras, her brioches and her foie gras! Always active, Paulette is quiet strength
Winged: The master of garnishes! He prepares his implementations at lightning speed! If you hear singing or laughing in the kitchen, it will surely be due to his talents as an entertainer! He doesn't have his tongue in his pocket, to our greatest pleasure!
Jordan: Our pastry chef, the newest addition to the team, but who has already found his place! He delights us with his desserts made with passion! He likes to annoy us but makes us laugh.
Jason: he's our diver, without fins and without snorkel, but always (or almost) with a smile! His favorite phrase: “It’s going to blow!” »
Sarah: Our waitress is joy and cheerfulness! Always going all out, does she have roller skates hidden under her sneakers? Always ready to help her colleagues, Sarah sends as many plates as smiles!
Serge: Our Basque boss, Carbetian by adoption! What he prefers: the quality controls of the restaurant's cocktails. He tells us lots of anecdotes, our Don Sergio, the man of a thousand and one professions.

A little history ...

By an edict of March 1642, the lords of the Company of American islands that belonged to Martinique, obtained confirmation of their concessions and last set limits to the limits of their properties.
